Who else is making this mediterranean “pasta” as a meal this week?

INGREDIENTS
 2 large zucchini, spiral sliced
 1 cup spinach, packed
 2 tbsp olive oil
 2 tbsp butter
 5 cloves garlic, minced
 sea salt and black pepper, to taste
 ¼ cup sun-dried tomatoes
 2 tbsp capers
 2 tbsp Italian flat leaf parsley, chopped
 10 kalamata olives, halved
 ¼ cup Parmesan cheese, shredded
 ¼ cup feta cheese, crumbled

INSTRUCTIONS

In a large sauté pan, over medium heat, add zucchini, spinach, olive oil, butter, garlic, sea salt and black pepper. Sauté until zucchini is tender and spinach is wilted. Drain excess liquid.
To the pan, add sun-dried tomatoes, capers, parsley, and kalamata olives. Mix in and sauté 2-3 minutes.
Remove from heat and toss with Parmesan and feta cheeses before serving.

Today Doug Jr. finished his Athlete Mini Camp! We couldn’t have asked for a better group! 
Sprints, push ups, burpees, change of direction, lateral explosiveness, tug of war, relay races, and more were done with these fantastic kids this week! 
We look forward to doing more of these! 💪🏼

The heat wave may have just ended but it’s always nice to have a frozen treat on hand should the mood strike. Next time it heats up, try these delicious Keto Lime popsicles! 
Ingredients
1 can full fat coconut milk
½ cup mashed avocado
½ cup lime juice, freshly squeezed
¼ teaspoon vanilla stevia
⅛ teaspoon vanilla powder

Instructions
In a vitamix combine coconut milk, avocado, lime juice, stevia, and vanilla
Blend until smooth
Transfer mixture to a popsicle mold
Insert popsicle sticks
Freeze 4 hours
Serve
